These peppercorns come from China and have been renowned for their exquisite flavour since ancient times. Sichuan red peppercorns are highly aromatic with flowery citrus notes (orange peel and bergamot) that are an ideal match for savoury dishes, including duck, fish, pork and chicken.
Sichuan pepper is also the ideal accompaniment for sweet treats and desserts containing chocolate or fruit (citrus, apricots and melon).
We would advise you to grind the pepper at the very last minute using a Peugeot pepper mill on a fine setting to avoid cooking the pepper, which tends to develop a bitter taste. Sichuan red peppercorns can also be infused into your favourite oils or even honey which creates a sensational marinade for meats and roasted vegetables.
