The channel knife is a classic barkeepers tool. The blade cuts deep into the skin of (citrus) fruit and vegetables creating ribbons and notches. The fixed penetration depth makes it very easy to use. The blade is carefully sharpened. A glass fibre reinforced polyamide handle is made for professional use. This right-handed version is only suitable for right-handed use.
